Most people love fresh salmon but do not always use everything the fish offers. Here is one way to use more of the fish you catch for a quick and easy meal.
Usually fresh salmon is prepared as steaks or fillets. But, one of my favorite things to so is to grab a spoon and scrape any extra beautiful orange flesh from the back bone after the fish has been filleted. Not much meat is left, but what is left is wonderful and I like to prepare it a couple of different ways. You might like to try one of these options: 1 - Melt a little butter or coconut oil in a skillet on medium then add the salmon scrapings, a little chopped onion. Flip once and put it on your place and call it a snack or a meal. YUM 2 - Break an egg in a bowl, add a touch of worcestershire sauce, chopped green onion, a pinch of Celtic salt and enough bread crumbs to form a patty. Melt a bit of butter or coconut oil in a skillet on medium heat, add the patty cook a minute on each side or until the color lightens. Serve over fresh greens with a drizzle of vinaigrette. Mmmm.

Just sitting in the Reluctant Fisherman Restaurant is a treat. After ordering the fresh Red Salmon Burger and looking out at the harbor, seeing boats being tied up after a stormy opener I realized, this is an amazing dinner show! Those fisherman must have had a really rough time out there with the weather so blowy and nasty during the last 20 hours. It is nice to see that they are all headed home for a well deserved rest. While finishing my dinner, paintings of Bears caught my eye, by talented artist Paula Payne. A whole wall shows bear paintings of McNeil River Bears. Each bear has a personality that seems to jump from the canvas, the fun and playful settings each bear enjoys is a delight to see. The sales of these paintings on the heART wall (created by Sylvia Lang, Reluctant Fisherman Inn owner and artist) will bring donations to Cordova Arts the local non-profit arts group that promotes the Arts in Cordova.
Next time I get to eat out at the Reluctant, my choice will be the fresh King Salmon Steak Appetizer, It had better be soon because fresh King Salmon is not always on the menu. Hmm, better put that on my schedule for later this week...... |
