If you like top quality seafood, you're going to love this. If you also love digging through recipes, carefully following directions and long ingredient lists, you might love it a little less. But just a little. After a long day at work I am usually ready to grab the first pre-made item sitting in Nichol's deli case and call it dinner. But tonight I figured I could wait a little longer in the name of culinary excellence. My flash frozen halibut fillet from Cordova Gear was already thawed in my refrigerator, and ready to pop in the oven. I laid it in a ceramic baking dish surrounded by sliced sweet potatoes, pre-cooked rice and pickled fire-weed shoots, dabbed about 2 tablespoons of butter around, sprinkled high quality Celtic Sea salt (also available at Cordova Gear) over it all, added enough water to the pan to keep it steaming and not scorching, covered it with tinfoil, and left it at 350 degrees for approximately 40 minutes. And I was not disappointed! Having lived in Alaska my whole life, I can say absolutely that this was of as high a quality as any unfrozen fish straight from the ocean. I have lots of recipes for fish including things such as spices, sauces, encrustations of seeds, crackers, and potato buds, but when you have great fish and not a lot of time or energy, it's nice to know that you can wing it, add whatever items you have on hand, and the minimal ingredients will only serve to elevate the fish instead of hiding it.
